Just cooked this mini zucchini loaf today. I have some cooling in the fridge for tomorrows lunch (chilled) and the rest are in the freezer to get reheated in the oven at a later date. You just wrap them in foil and reheat in your oven. They are very easy to make and serve as a healthy snack. I dice the carrot and zucchini into miniscule pieces instead of grating as I just prefer dicing as it keeps the slice from going soggy. A great way to use up leftover eggs!
