Risotto el Jynx

  • 1 cup Arborio rice (pls don’t substitute with other rice, it will be…weird)
  • 2 cups stock (stock choice depends on additives. I prefer chicken)
  • White cooking wine (optional)
  • 3-12 cloves garlic (I mean, a whole bulb, always, right?)
  • Herbs of choice (thyme, sage, oregano are my favs)

 

Additives - Choose a few of the following that feel complimentary for you. Don’t add too many though; with risotto, less is more.

  • Mushrooms (roasted or pan fried, dealers choice)
  • Chicken (browned in fry pan)
  • Oven roasted pumpkin (butternut is best according to my taste buds. They’re quite the experts)
  • Bacon/ham
  • Spring onions or chives
  • Sundried tomatoes
  • Peas or beans
  • Prawns, I guess (don’t ask me how to cook em, I don’t eat seafood)
  • Spinach or rocket
  • Anything else that tickles your fancy 

 

Cooking time!

 

  1. Alright, what you gonna do is grab a giant ass pan and slap some oil in that bad boy. Olive oil is best but any oil will do.
  2. Once the oil is warmed up, bang your rice into the pan. Add your garlic and herbs here too, get those fragrances whirling around the kitchen!
  3. You wanna keep the rice moving, stir often, and once you see some of the grains begin to brown that’s when we're gonna liquidate.
  4. Get your white wine if you’re using it, if not grab some of the stock - best if it’s hot. Schlop about a quarter of a cup into the pan and enjoy the sizzle!
  5. Thing about risotto, is you gotta keep it moving, stirring it every minute or so. Once the liquid has evaporated, you want to keep topping it up with more stock bit by bit. Just keep repeating this process. Pour a bit of liquid in, stir it around a bit, let the liquid evaporate/get absorbed into the rice. For me, I sometimes run out of stock and the rice is not yet cooked so I will continue to top it up with hot water.
  6. Once it has reached a creamy texture and the rice is soft, you're golden. This is where you wanna plop in all your additives (which should be pre-cooked just for the record).
  7. Top with parmesan or your cheese of choice!

My SANE kitchen is Darrell Lea Rocky Road... but I didn't make it.. I was only cutting it up @Birdofparadise8 @ArraDreaming @Jynx @Bow @Oaktree

Yes it is! I like to add more nuts and less marshmallows because I don't really like marshmallows. I always add coconut though and I use dark chocolate. Yum! @Birdofparadise8
