Nicki is a cutie @ArraDreaming Thank you for sharing the photo with me.
She will be fine. Dogs are very resilient. My little boy stresses when I am not around too but he copes. I am very lucky he loves my sister so anytime I have had to be away she comes and stays at my house with him.
Now for the trip. Do you have a tarp you could take to place over the tent to help with rain if it comes? I can definitely see you are stressing about the trip but hoping the rain stays away for you. If it doesn't then I am sure you will make the most of it for your kids - you are such a wonderful Dad so whatever happens - you will deal with it. Try not to stress in the next few days. Sometimes we just have to accept what is right at our feet and let the rest go. What will be will be and you have no control over some things (like the weather). I have evreything crossed for you that it will be okay.
