Here's one @outlander. It's how I change colours and what I find looks the best. At the start of the video you'll find how to change colour at the end of the row. At about 6:10 you'll see them change colour in the middle of a row (which is the same idea).
The video is by "Bella Coco" and they have so many different tutorials and hints and tips. All of the videos I've seen by Bella Coco are helpful, clear, slow enough to see etc.

Haha @outlander the struggle there is real ๐ How cool is it to have too many ideas of what you could do though?!
I like yarn cakes as they take away that need to think of what colour next, which I can ponder for way too long sometimes. I'm not a fan of the price of them though.
I don't think I've shared this one but what you're doing now reminded me of it. It's from a rainbow cake I picked up while I was at the break place as a reward for something difficult I did. Like it sounds you may have done, I couldn't settle on what to do with it and started a few things but wasn't happy with them (I played frog lots ๐ธ!). In the end I made this little shawl thing for one of mine which they love snuggling up with.
It's made with one cake and a similar kind of pattern with the stitches as your granny square. Totally doable with where you are now.
Just throwing another idea out there ๐ Have you mixed crochet and pinterest together yet? That has baaaad news written all over it ๐๐
