am a little tired today after doing night shift last night, thank God for weekends.
Salad is so healthy and so un-me, am more of a vegie person but the trick and problem with diabetes is in finding variety and beyond sugar which is simple what other problem items are.
i saw a dietician on doctors orders and they give some assistance but very soon after that you are on your own.
If you believe my friend and the youtube propaganda apple cider vinegar is a miracle cure. Still, who believes in miracles?

I tried this and adapted it slightly to make it diabetic friendly and gluten free. Its simple ingredients yet it really tastes quite amazing!!! I don't know why I didn't cook this earlier. It will be on my regular rotation for sure!
If you are getting bored with your diabetic diet and want something with taste then this meal is easy to make under 30 minutes! Plus its all in one pot so hardly any fuss or washing up. I wish I had of known about this recipe years ago.
The Keto Sauce is low carb and sugar free and really lifts this recipe. I use the Celebrate Health brand of keto BBQ sauce. The Konjac penne is a diabetic low carb pasta option that can be easily folded into the recipe in minutes! Its usually sold at supermarkets but you can always buy direct online from the manufacturer.
Instead of soy sauce I use Coconut aminos which tastes a lot better. Its a sweeter taste and is good if you cannot have soy in your diet. I love Coconut aminos I wouldn't be without it. it can be used in place of soy in stir fries. Once you try coconut aminos you wont go back to using soy sauce ever again lol!
For something that has only basic ingredients the flavours meld and it produces a wonderfully sweet tasting dish. The best comfort food!
Anyway here is the recipe for one person. Adjust quantities for your household!

it looks delicious, once I had the pleasure of eating goulash in Prague, not quite Hungary but very nearby and loved it.
This looks very enticing as well, diabetes is such a bugger of a thing but sharing and helping with ideas can certainly help in adjusting.

Hey @Alittleorange thanks for your response! Hungarian goulash is slightly different to American goulash going by the internet. This version is really flavoursome! I was diagnosed with diabetes a while back and had to cut out even healthy treats! My body has adjusted and I do quite well despite restrictive food choices. I prefer living this way now because my overall health is a lot better. But you can't do a lot of things you used to do! It can feel lousy to begin with but over time your body adjusts and it becomes a lifestyle thing.

@SmilingGecko do you still make sweet potato bites? I was looking for the recipe .
but can't find it. I think you used vegan cheese and panko breadcrumbs. I'll probably use parmesan or another hard cheese.

@Dimity I haven't made them in a while as theres no vegan cheese available where I am.
I use "Orgran" brand panko breadcrumbs and "Made With Plants" brand vegan parmesan. These are both gluten free by the way

thanks for that, for me the biggest shift would not be in the goulash but the dipping bread, most fun part of the meal.
I agree thought that after adjusting my diet, not quite as restrictively as yours yet I believe, and doing a bit of adjusting that my diet is actually far healthier.
