Ouch! No potatoes is tough! I had to give up (or severely cut back) sugar when I was diagnosed with diabetes in 2017. It thought it would be really tough, and it was to start with, but i got used to it reasonable quickly. Yeah, there were cravings every now and then but you just adjust and find other things to replace what you cut out. Good luck with it.

Always soooo hard to make those kinds of changes hey @Oaktree!! I hope it can potentially be an opportunity for some creativity - seeing what you can do within the restrictions! I remember when I first went vegan (no longer, was only for like a year or so) I had to get very creative with my cooking (esp since back then vegan food wasn't as readily available). Do you like to cook?

I don’t mind cooking but I need to find some delicious vegetable recipes. I don’t really like many vegetables. I am going to take salads to tafe for lunch. Do you have any recommendations for healthy vegetable recipes?

I feel the same @Oaktree I was vego for most of my 20s and always flirted with the idea of trying to be vegan but just couldn't let the cheese go!

@Oaktree I struggle with veg too!! I was a fussy eater as a kid, always needed all my veg to be raw and served separately lol.
I guess it depends on your taste!! I try to find dishes that include lots of veg but also lots of flavour, so it doesn't really feel like 'eating healthy' - stir fries are probably the easiest, I just smash some green beans, bok choi, carrots, broccoli, and a smidge of tofu (if that's allowed) and fry it up in some teriyaki marinade or something! Or homemade honey soy, sooooo good.
Also love a roast - my fav is to do a pan of red onion, carrot, garlic, and potatoes, w some rosemary and salt! The red onion caramlises in the oven and just makes everything taste soooo good. I know if you gotta skip the meat it can feel a bit lacklustre but I dunno I remember once sitting there eating like a third of the pan without even realising 😅
Salads also can work, you can get kinda creative with em too, doesn't all have to be leafy greens and cherry tomatoes. Adding in stuff like apple, pomegranite, etc can really make it pop and add in flavour without it having to come from the dressing.

I have started saving some recipes over at taste.com.au and I have saved some recipes from the BBC site. I made some Ham and cheese quinoa bites from eat well for less but I left the ham out and I put in curry powder instead of mustard. They were delicious.

Cheese IS life @Oaktree I totally agree! Yeah back to meat now, I don't have it as often as I used to and try to buy from local butcher/get more sustainable meats like kangaroo and game when I can, so it works out. Plus, I can eat bacon again 🤤
