Not much of a car racing fan...can enjoy watching it sometimes...can't watch a whole race from start to finish, but keeping an eye on it - esp Bathurst - can be cool
Probably my two achievements for the day will be voting in council elections later and then watching too much footy (AFL and NRL) later on! lol

Thank-you @Mustang67 I have been zipping around my kitchen! I try not to waste food. I've tried the frozen cauliflower rice from the shops - it was ok. It will keep your carb content down for weight management. If I have a leftover head of cauli will blitz it.
Just done the eggplant pesto. Its got eggplant, sage, olives and cashews. Its versatile it can go in a wrap for breakfast with pan-fried mushrooms.
The beetroot is in the oven and once its cooked then cooled will have a beetroot dip to go on crispbread as a healthy snack - I use tahini, half a tin of chickpeas and a chopped clove of garlic blitzed in a food processor.
Its just a way to cut corners financially, use up what I have and try to eat healthy snacks as I have been diabetic and overweight 💗

Did you vote @StuF? I don't know who I will be voting for. I'm not apathetic but you can't trust these councillors. I've ticked off all my daily achievements and am now using up a stack of tomatoes to make a roast tomato soup. Its roasting in the oven now then will put it in a pot with stock. I will freeze it to defrost for a day when I feel too comatosed to cook for myself. I haven't had takeaway since the pandemic. Everything is just getting so damn expensive. Do you notice the pinch financially living with your olds? I know you mentioned you don't get out much in the car except for essentials as petrol prices are up. I've really had to cut back. My solar power makes a huge difference during those months where there is more light. My last bill was zero. From about now until sometime autumn I get money back on my bill instead of paying $100/month

@SmilingGeckoI tried cauliflower rice once and thought the text was nothing like rice... more like blitzed up cauliflower. Maybe it was too blitzed, I don't know. Maybe I just like rice too much. I do like cauliflower so it wasn't a taste thing... just the texture.

@Mustang67 What a beauty! It's a similar colour to my FG, but it looks like yours had a purple tinge. Mine is more a pure blue. I hope it went to a good home. It must have been terrible to lose it 😫 The thought depresses me, and it wasnt even my car!

Im not sure if i mentioned it before. My partner knows I love them... mainly because everytime I see one, I go "Owww A Mustang!" A few months back she was talking to someone at her work and her young son had just been taken for a ride in one but a friend she had. So my partner asked if he would take me for a ride. I felt a bit weird about it, sort of like I was a make-a-wish kid or something. But I wasn't going to miss this opportunity. So all this guy wanted was a carton of beer so it was done. He turned up and we went outside. I was thinking it was a modern Mustang for some reason, but when I went out it was a classic right-hand drive one. We drove from home (down in the southern suburbs) all the way out to Outer Harbour and back. It was awesome!! We just talked about cars the whole time. He owns a business that restores them and even races them. He also has a FG like mine that they race as well. It was such an awesome day. I was so excited I forgot to get a photo of me in the car! 😞

@StuF I have always wanted to host a Bathurst Party. I used to have a large house and a 100" screen that came down from the ceiling and a projector. It would have been great watching the race on that screen.
But unfortunately I lost that house.
And there is nothing wrong with watching too much footy. That's what weekends are about, isn't it?
I watched my team win last night, so I am happy. Now all I need is for Cameron Waters to win the V8's and Melbourne Storm to lose, since my ex supports them. Lol

Yes having your resources pooled under one roof would make a difference. I'm finding I've really had to be resourceful more than ever but you do get a sense of pride squeezing your budget and making do with bargains and using up what you have. Was so glad to get vegan makeup for $10ea from an end of line, near useby date, damaged packaging discount supermarket yesterday. Its amazing what you can do!
