It's a beetroot soup @Shaz51 . I'm using lentils instead of meat. Other veggies too. Usually you serve it with a dollop of sour cream or yoghurt.

Caraway would go well @TAB I sometimes use some fennel seed but today I sliced up half a fennel bulb. My recipe usually has celery but today I'm trying the fennel instead to add to the beetroot and carrot.

Just checked the basic recipe @Shaz51 but I've adapted it a bit over the years. Basically onion beetroot carrot celery tomato parsley with stock and flavourings - bay leaf and cloves originally but today I used Italian herb mix, garlic and fresh fennel instead of the onions parsley or celery.  A dash of lemon juice or vinegar. And finished with a dollop of sour cream. It's a thick soup of finely chopped veggies and is a good winter warmer. I certainly enjoyed it tonight... with some rye bread.
